2 CUPS FRESH BASIL LEAVES
1/3 CUP PINE NUTS
1 TO 3 LARGE GARLIC CLOVES
1/2 CUP EXTRA VIRGIN OLIVE OIL
1/2 CUP FRESHLY GRATED PARMESAN CHEESE (NOT THE GREEN CAN PLEASE!)
SALT AND PEPPER TO TASTE
ONE POUND OF LINGUINE
1. BLEND THE BASIL, PINE NUTS, GARLIC, SALT AND PEPPER IN A FOOD PROCESSOR. WHILE THE FOOD PROCESSOR IS RUNNING, SLOWLY ADD THE OIL UNTIL MIXTURE IS BLENDED. ADD GRATED PARMESAN.
2. SAVE 1/2 CUP OF THE PASTA COOKING WATER BEFORE DRAINING THE LINGUINE. TOSS PASTA WITH PESTO SAUCE AND ADD RESERVED WATER IF PESTO SAUCE IS TOO THICK. ADD MORE PARMESAN CHEESE IF YOU WISH.
